Watermelon and Feta Salad with Honey Balsamic Vinaigrette
Servings 2 sides or 1 main
- 2 cups watermelon pieces cut in cubes.
- 2 ounces feta cubed
- 2 teaspoons balsamic vinegar
- 1 teaspoon olive oil
- ½ teaspoon honey
- 1-2 teaspoons sesame seeds
- ¼ cup chopped mint
Place the watermelon, feta, mint in a bowl and toss gently.
In a small bowl mix the olive oil, vinegar, honey and a pinch of salt.
Drizzle on the salad and mix.
Sprinkle with sesame seeds and add freshly ground pepper.
Cover and let it sit in the refrigerator for an hour before serving.
