Watermelon and Feta Salad with Honey Balsamic Vinaigrette

Ingredients

  • 2 cups watermelon pieces cut in cubes.
  • 2 ounces feta cubed
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon olive oil
  • ½ teaspoon honey
  • 1-2 teaspoons sesame seeds
  • ¼ cup chopped mint
  • salt/pepper

Instructions

  • Place the watermelon, feta, mint in a bowl and toss gently.
  • In a small bowl mix the olive oil, vinegar, honey and a pinch of salt.
  • Drizzle on the salad and mix.
  • Sprinkle with sesame seeds and add freshly ground pepper.
  • Cover and let it sit in the refrigerator for an hour before serving.
