Hummus Breakfast Toast

A perfect vegan, mediterranean breakfast: Whole grain toast topped with hummus, red pepper strips and a sprinkle of pine nuts

Ingredients

  • ½ tsp Extra virgin olive oil
  • 1 small red bell pepper, sliced
  • 1 large slice whole grain bread
  • 1 tbsp hummus
  • 1 tsp pine nuts

Instructions

  • Heat olive oil in small pan, once hot saute peppers for 2-3 minutes.
  • Toast bread, spread hummus, top with peppers and sprinkle pine nuts.

Notes

If you don't have hummus on hand, I suggest you use tahini. Just mix it with a teaspoon of water and a bit of lemon juice and spread it on your bread.
