  4. I am very interested in your book, but I need to how a diet that is mostly vegetarian and depends a lot on things like grains and legumes works for someone who is pre-diabetic. I have lowered my carb intake – especially refined carbs to cope with that, but I’m not sure how the Mediterranean diet would work with my condition. Any advice? Thank you.

I want to congratulate you on writing your cookbook. I grew up watching my mom cook and I have been told by friends and family members that I am an excellent cook. I began to write my recipes, but I will order two books for them! Thank you for doing it. For those of you who might hesitate, I can attest that Elena’s recipes are the the best!

  6. I’m excited about your cookbook. I’ve really moved away from the written page, but for this I will make an exception. I’m always having to Google Greek recipes and really have been meaning to gather them in a recipe book of my own, but now I don’t have to because you did the work. 🙂
