Traditional Greek Tomato and Feta Toast
This delicious Mediterranean snack made with perfectly toasted crusty bread, topped with ripe summer tomato, drizzled with olive oil and sprinkled with crumbled tangy feta cheese is perfect for any time of the day.
Before “toasts” was the latest thing, people in the Mediterranean were having these all the time. The Italians have the bruschetta, the Spanish have pan con tomato and here in Greece we have dakos (from the island of Crete) and riganatha a dish common on the Ionian coast of Greece.
This type of preparation is common all over the Mediterranean as a way to never throw away anything and that includes stale bread. It’s a perfect snack, appetizer, even meal as it is a common breakfast food as well. And you get at least 1 serving of vegetables along with the good fats from the olive oil.
Greek Tomato and Feta Toast Ingredients
- Whole grain bread: This makes a huge difference in terms of health (for any sandwich). Good bread should only have flour, yeast, and salt in it. Processed breads do not brown well and become chewy not crispy.
- Bread: Typically, sourdough bread is used but you can also use whole grain bread. You want it to be thick though. If you don’t have stale bread, you can slightly toast fresh bread.
- Red Wine Vinegar: This provides flavor to the bread
- Tomatoes: Large ripe tomatoes work best for this recipe
- Extra Virgin Olive Oil: As always make sure your olive is extra virgin and fresh, stale olive oil will ruin any dish
- Oregano: Dry oregano is a key ingredient for this dish.
- Feta: Authentic feta is made with sheep’s and or goat’s milk.
- Black olives: Kalamata olives are typically used. Here I used a drier Greek olive.
How to make Greek Tomato and Feta Toast (Riganatha)
You want to cut 1-inch-thick slices of bread.
Then you want to grate a medium tomato on a grater. This is the typical technique for grating fresh tomatoes. Then drain. (i like to save that juice and drink it with a bit of pepper and lemon).
Then you can toast the bread either in a toaster or in a pan. This works nicely if your bread is not stale, the toasting hardens it a bit.
Then you drizzle the bread with red wine vinegar.
Top with all the tomato and sprinkle with oregano, then crumbled feta.
Place a few olives on top and drizzle with olive oil.

Traditional Greek Tomato and Feta Toast
Ingredients
- 1 thick slice of bread preferably sourdough you can also use whole grain
- 2-3 tsp red wine vinegar
- 1-2 medium tomatoes
- A pinch of salt
- 1 ½ tbsp crumbled feta
- 2-3 tsp extra virgin olive oil
- ½ tsp oregano
- 2-3 Kalamata olives
Instructions
- Slice the bread 1-inch-thick
- Grate 2 medium tomatoes and drain
- Toast the bread either in a toaster or in a pan. This works nicely if your bread is not stale, the toasting hardens it a bit.
- Drizzle the bread with red wine vinegar.
- Spoon over the bread the grated tomato and sprinkle with oregano, then crumbled feta.
- Place a few olives on top and drizzle with olive oil.
